Spiced Lentil and Paneer Wraps

Ingredients
- 1 cup Red lentils
- 1 cup, cubed Paneer cheese
- 1, chopped Onion
- 2 cloves, minced Garlic
- 1 inch, grated Ginger
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon (adjust to taste) Chili powder

- 4 large Tortilla wraps
- 4 leaves Lettuce
- 1, sliced Tomato
- 1, sliced Cucumber
- 1/4 cup, chopped Mint leaves

- 2 tablespoons (for cooking) Oil

Instructions
- Rinse the red lentils thoroughly under cold water. In a pot, cook the lentils according to package instructions until tender, usually about 15-20 minutes. Drain and set aside.
- In a large pan, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pan. Cook for another minute until fragrant.
- Stir in the cooked lentils along with turmeric powder, cumin powder, coriander powder, chili powder, and salt. Mix well and let it cook for 5 minutes, allowing the flavors to meld.
- Gently fold in the cubed paneer cheese and cook for an additional 2-3 minutes, or until the paneer is warmed through.
- Remove the pan from heat and stir in the lemon juice for a refreshing touch.
- Warm the tortilla wraps in a dry pan or microwave until pliable.
- To assemble, place a lettuce leaf on each tortilla wrap. Spoon a generous amount of the lentil and paneer mixture onto the lettuce.
- Top with sliced tomatoes, cucumbers, a dollop of yogurt, and sprinkle with chopped mint leaves.
- Roll up the wraps tightly, securing the filling, and serve immediately.
