Spiced Lentil and Paneer Wraps

Ingredients

Red lentils
1 cup
Paneer cheese
1 cup, cubed
Onion

1 teaspoon
Coriander powder
1 teaspoon
Chili powder
1/2 teaspoon (adjust to taste)
Salt
to taste
Lemon juice
1 tablespoon
Tortilla wraps
4 large
Lettuce
4 leaves
Tomato
1, sliced
Cucumber
1, sliced
Mint leaves
1/4 cup, chopped
Yogurt
1/2 cup (for topping)

Instructions

  1. Rinse the red lentils thoroughly under cold water. In a pot, cook the lentils according to package instructions until tender, usually about 15-20 minutes. Drain and set aside.
  2. In a large pan, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pan. Cook for another minute until fragrant.
  4. Stir in the cooked lentils along with turmeric powder, cumin powder, coriander powder, chili powder, and salt. Mix well and let it cook for 5 minutes, allowing the flavors to meld.
  5. Gently fold in the cubed paneer cheese and cook for an additional 2-3 minutes, or until the paneer is warmed through.
  6. Remove the pan from heat and stir in the lemon juice for a refreshing touch.
  7. Warm the tortilla wraps in a dry pan or microwave until pliable.
  8. To assemble, place a lettuce leaf on each tortilla wrap. Spoon a generous amount of the lentil and paneer mixture onto the lettuce.
  9. Top with sliced tomatoes, cucumbers, a dollop of yogurt, and sprinkle with chopped mint leaves.
  10. Roll up the wraps tightly, securing the filling, and serve immediately.
