Servings: 12

Ingredients

  • All-purpose flour (1 1/2 cups)
  • Baking powder (2 teaspoons)
  • Ground cinnamon (1 teaspoon)
  • Ground nutmeg (1/4 teaspoon)
  • Ground ginger (1/2 teaspoon)
  • Salt (1/2 teaspoon)
  • Grated parsnips (1 cup, packed)
  • Brown sugar (3/4 cup)
  • Vegetable oil (1/3 cup)
  • Eggs (2, large)
  • Milk (1/2 cup)
  • Vanilla extract (1 teaspoon)
  • Raisins (1/2 cup)
  • Chopped walnuts (1/2 cup)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.
  3. In another bowl, mix the grated parsnips, brown sugar, vegetable oil, eggs, vanilla extract, and milk until fully incorporated.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined; be careful not to overmix.
  5. Fold in the chopped walnuts and raisins, ensuring they are evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. For an extra touch, consider drizzling a simple maple glaze over the muffins. To make the glaze, whisk together 1 cup of powdered sugar and 2 tablespoons of maple syrup with a splash of milk until smooth.
