Aromatic Spiced Pea and Coconut Curry

Experience a culinary journey to South Asia with this aromatic Spiced Pea and Coconut Curry. This rich and creamy dish is brimming with an orchestra of flavors from aromatic spices and the sweetness of peas, balanced by the creaminess of coconut milk. Ingredients

Vegetable oil
2 tablespoons
Onion
1 large, chopped
Garlic
2 cloves, minced
Ginger
1 inch piece, grated
Curry powder
2 teaspoons
Cumin
1 teaspoon
Coriander
1 teaspoon
Turmeric
1/2 teaspoon
Cayenne pepper
1/4 teaspoon
Frozen peas
2 cups
Coconut milk
1 can (14 ounces)
Tomatoes
2 medium, diced
Lime juice
1 tablespoon
Fresh cilantro
1/4 cup, chopped
Salt
to taste
Cooked rice
for serving

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, and sauté for another 2 minutes until the raw smell disappears.
  4. Sprinkle in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well to coat the onions in these aromatic spices.
  5. Add the frozen peas, coconut milk, and diced tomatoes to the pan. Mix everything well to combine.
  6. Allow the mixture to come to a simmer and let it cook for about 15 minutes, or until the peas are tender and the flavors are well blended.
  7. Finally, stir in the lime juice and chopped cilantro. Season with salt according to your preference.
  8. Serve your aromatic spiced pea and coconut curry over fluffy, cooked rice. Garnish with additional cilantro if desired.
