
Spiced Pea and Coconut Curry

Ingredients
- Cooked rice (for serving)
- Salt (to taste)
- Fresh cilantro (2 tablespoons, chopped)
- Lime juice (1 tablespoon)
- Tomatoes (2, diced)
- Coconut milk (1 can (400ml))
- Frozen peas (2 cups)
- Cayenne pepper (1/4 teaspoon)
- Turmeric (1/2 teaspoon)
- Coriander (1 teaspoon)
- Cumin (1 teaspoon)
- Curry powder (2 teaspoons)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Onion (1, finely chopped)
- Vegetable oil (2 tablespoons)
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well to coat the onions and spices.
- Add the frozen peas, coconut milk, and diced tomatoes. Stir to combine.
- Bring the mixture to a simmer and let it cook for 15 minutes, or until the peas are tender.
- Stir in the lime juice and chopped cilantro. Season with salt to taste.
- Serve the spiced pea and coconut curry over cooked rice.
- Garnish with additional cilantro, if desired.
