Aromatic Spiced Pea and Coconut Curry

Ingredients

- 1 large, chopped Onion
- 2 cloves, minced Garlic

- 1/4 teaspoon Cayenne pepper
- 2 cups Frozen peas
- 1 can (14 ounces) Coconut milk
- 2 medium, diced Tomatoes
- 1 tablespoon Lime juice
- 1/4 cup, chopped Fresh cilantro

Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, and sauté for another 2 minutes until the raw smell disappears.
- Sprinkle in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well to coat the onions in these aromatic spices.
- Add the frozen peas, coconut milk, and diced tomatoes to the pan. Mix everything well to combine.
- Allow the mixture to come to a simmer and let it cook for about 15 minutes, or until the peas are tender and the flavors are well blended.
- Finally, stir in the lime juice and chopped cilantro. Season with salt according to your preference.
- Serve your aromatic spiced pea and coconut curry over fluffy, cooked rice. Garnish with additional cilantro if desired.
