Pineapple chunks
4 cups, fresh or canned (drained)
Brown sugar
1/2 cup
All-purpose flour
1 cup
Granulated sugar
1/4 cup
Baking powder
2 teaspoons
Cinnamon
1 teaspoon
Salt
1/4 teaspoon
Unsalted butter
1/2 cup, cold and cubed
Milk
1/2 cup
Vanilla extract
1 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the pineapple chunks and brown sugar. Toss gently to ensure the pineapple is evenly coated.
  3. Transfer the pineapple mixture to a greased 9x9 inch baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together the all-purpose flour, granulated sugar, cinnamon, baking powder, and salt until well combined.
  5. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
