Spiced Pineapple Cobbler

Indulge in the tropical delight of Spiced Pineapple Cobbler, a warm and inviting dessert that celebrates the sweet juiciness of fresh pineapple, perfectly complemented by a buttery, cinnamon-spiced crumble topping. This dish not only brings the flavors of the tropics to your table but also carries a rich history, tracing back to the days of rustic American cooking where cobblers were a way to showcase seasonal fruits. Serve it warm, perhaps with a scoop of vanilla ice cream, and let the comforting aromas transport you to a sun-soaked beach.

Serves 8

Ingredients

Pineapple chunks
4 cups, fresh or canned (drained)
Brown sugar
1/2 cup
All-purpose flour
1 cup
Granulated sugar
1/4 cup
Baking powder
2 teaspoons
Cinnamon
1 teaspoon
Salt
1/4 teaspoon
Unsalted butter
1/2 cup, cold and cubed
Milk
1/2 cup
Vanilla extract
1 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the pineapple chunks and brown sugar. Toss gently to ensure the pineapple is evenly coated.
  3. Transfer the pineapple mixture to a greased 9x9 inch baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together the all-purpose flour, granulated sugar, cinnamon, baking powder, and salt until well combined.
  5. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  6. Stir in the milk and vanilla extract until the dough comes together. Be careful not to overmix.
  7. Drop spoonfuls of the dough over the pineapple mixture in the baking dish, covering as much of the pineapple as possible.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the pineapple is bubbling around the edges.
  9. Remove from the oven and let cool for a few minutes before serving. Enjoy warm, ideally with a scoop of vanilla ice cream.

Tips

  • 💡 For a twist, try adding shredded coconut or chopped nuts to the topping for added texture.
  • 💡 Pair this cobbler with whipped cream, yogurt, or a drizzle of caramel sauce for an extra indulgent treat.
  • 💡 If using canned pineapple, ensure to drain well to avoid excess moisture in the cobbler.
