Ingredients
- Pineapple chunks
- 4 cups, fresh or canned (drained)
- Brown sugar
- 1/2 cup
- All-purpose flour
- 1 cup
- Granulated sugar
- 1/4 cup
- Baking powder
- 2 teaspoons
- Cinnamon
- 1 teaspoon
- Salt
- 1/4 teaspoon
- Unsalted butter
- 1/2 cup, cold and cubed
- Milk
- 1/2 cup
- Vanilla extract
- 1 teaspoon
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the pineapple chunks and brown sugar. Toss gently to ensure the pineapple is evenly coated.
- Transfer the pineapple mixture to a greased 9x9 inch baking dish, spreading it out evenly.
- In a separate bowl, whisk together the all-purpose flour, granulated sugar, cinnamon, baking powder, and salt until well combined.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until the dough comes together. Be careful not to overmix.
- Drop spoonfuls of the dough over the pineapple mixture in the baking dish, covering as much of the pineapple as possible.
- Bake for 35-40 minutes, or until the topping is golden brown and the pineapple is bubbling around the edges.
