
Spiced Pineapple Cobbler
This spiced pineapple cobbler is a delicious dessert made with juicy pineapple chunks and a warm, cinnamon-spiced crumble topping.
Ingredients
- Vanilla extract (1 teaspoon)
- Milk (1/4 cup)
- Unsalted butter (1/2 cup, cold and cubed)
- Salt (1/4 teaspoon)
- Baking powder (1 teaspoon)
- Cinnamon (1 teaspoon)
- Granulated sugar (1/2 cup)
- All (purpose flour - 1 cup)
- Brown sugar (1/2 cup)
- Pineapple (1 large, peeled and cut into chunks)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the pineapple chunks and brown sugar. Toss to coat the pineapple evenly.
- Transfer the pineapple mixture to a baking dish.
- In a separate bowl, whisk together the all-purpose flour, granulated sugar, cinnamon, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until the dough comes together.
- Drop spoonfuls of the dough over the pineapple mixture in the baking dish.
- Bake for 35-40 minutes, or until the topping is golden brown and the pineapple is bubbly.
- Remove from the oven and let cool for a few minutes before serving.
- Serve warm with a scoop of vanilla ice cream, if desired.
