Scotch bonnet peppers

Instructions

  1. In a blender or food processor, add the Scotch bonnet peppers, chopped green onions, minced garlic, grated ginger, soy sauce, lime juice, brown sugar, ground allspice, ground cinnamon, ground nutmeg, salt, and black pepper.
  2. Blend the mixture until smooth, ensuring all ingredients are well incorporated.
  3. Heat the vegetable oil in a saucepan over medium heat until shimmering.
  4. Carefully pour in the jerk sauce mixture and cook for about 5 minutes, stirring occasionally to prevent sticking.
  5. Remove the saucepan from heat and allow the sauce to cool to room temperature.
  6. Transfer the jerk sauce to a clean jar or bottle and refrigerate until ready to use. The flavors will deepen as it sits.
