Noodles (preferably soba or rice noodles)

Cucumber
1 medium, julienned
Carrot
1 medium, julienned
Green onions
2, chopped
Cilantro
1/4 cup, chopped
Crushed peanuts
1/4 cup, for garnish
Garlic
2 cloves, minced
Ginger
1 tablespoon, grated
Sriracha sauce
2 tablespoons
Honey
1 tablespoon
Rice vinegar
2 tablespoons
Soy sauce
2 tablespoons
Sesame oil
1 tablespoon

Instructions

  1. Cook the noodles according to package instructions. Once cooked, drain and rinse them under cold water until chilled to stop the cooking process.
  2. In a large mixing bowl, combine the julienned cucumber, carrot, and chopped green onions. Toss to mix well.
  3. In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and Sriracha sauce until well combined to create a flavorful dressing.
  4. Add the chilled noodles to the bowl with the vegetables and pour the sauce over the top. Gently toss everything together until the noodles and veggies are evenly coated with the sauce.
