
Spicy Cold Noodles
These spicy cold noodles are a refreshing and flavorful dish perfect for hot summer days.
Ingredients
- Cilantro (2 tablespoons, chopped)
- Crushed peanuts (2 tablespoons)
- Sriracha sauce (2 teaspoons)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Honey (1 tablespoon)
- Rice vinegar (1 tablespoon)
- Soy sauce (2 tablespoons)
- Sesame oil (2 tablespoons)
- Green onions (2, thinly sliced)
- Carrot (1, julienned)
- Cucumber (1, thinly sliced)
- Noodles (8 ounces)
Instructions
- Cook the noodles according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cucumber, carrot, and green onions.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, garlic, ginger, and sriracha sauce.
- Add the cooked noodles to the bowl with the vegetables and pour the sauce over the top. Toss to combine.
- Garnish with crushed peanuts and chopped cilantro.
- Serve the spicy cold noodles chilled and enjoy!
