Fresh cilantro
1/4 cup, chopped
Vegetable oil
2 tablespoons, plus more for brushing
Black pepper
1/2 teaspoon
Salt
1 teaspoon
Brown sugar
1 tablespoon
Fresh ginger
1 tablespoon, grated
Garlic
3 cloves, minced
Sriracha sauce
2 tablespoons
Soy sauce
3 tablespoons
Lime juice
2 tablespoons, freshly squeezed
Squid
1 pound, cleaned and scored

Instructions

  1. In a medium bowl, whisk together the lime juice, soy sauce, sriracha sauce, minced garlic, grated ginger, brown sugar, salt, and black pepper until well combined to create a flavorful marinade.
  2. Add the cleaned and scored squid to the marinade, ensuring each piece is well coated. Cover and let it marinate in the refrigerator for at least 15 minutes to infuse all the flavors.
  3. Preheat your grill to medium-high heat. Brush the grill grates with vegetable oil to prevent sticking and ensure a nice char.
  4. Remove the squid from the marinade, shaking off any excess, and reserve the marinade for basting during grilling.
  5. Place the squid on the grill and cook for 2-3 minutes per side, basting with the reserved marinade, until the squid is cooked through and has beautiful grill marks.
  6. Once done, carefully remove the grilled squid from the heat and let it rest for a few minutes. This allows the juices to redistribute for maximum tenderness.
