1 large, diced
Cauliflower florets
1 cup
Carrot
1 large, sliced
Bell pepper
1, sliced

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the onion, bell pepper, carrot, cauliflower, and potato to the pan. Sauté until the vegetables are tender, about 10 minutes.
  3. Add the minced garlic, grated ginger, curry powder, turmeric, cumin, cayenne pepper, and salt to the pan. Mix well to ensure the vegetables are evenly coated in the spices.
  4. Allow the mixture to cook for an additional 2-3 minutes, or until the spices become fragrant.
  5. Remove the pan from heat and mix in the lemon juice and chopped cilantro.
  6. Warm the tortillas in a separate pan over low heat or in the microwave for 15-20 seconds.
  7. Divide the spiced vegetable mixture evenly among the warm tortillas. Roll them up tightly to form the wraps.
