- Lemon juice (2 tablespoons)

- Turmeric (1/2 teaspoon)
- Curry powder (2 teaspoons)
- Ginger (1 tablespoon, freshly grated)
- Garlic (3 cloves, minced)
- Potato (1 large, diced)
- Cauliflower florets (1 cup)
- Carrot (1 large, sliced)
- Bell pepper (1, sliced)
- Onion (1, sliced)
- Vegetable oil (2 tablespoons)
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add the onion, bell pepper, carrot, cauliflower, and potato to the pan. Sauté until the vegetables are tender, about 10 minutes.
- Add the minced garlic, grated ginger, curry powder, turmeric, cumin, cayenne pepper, and salt to the pan. Mix well to ensure the vegetables are evenly coated in the spices.
- Allow the mixture to cook for an additional 2-3 minutes, or until the spices become fragrant.
- Remove the pan from heat and mix in the lemon juice and chopped cilantro.
- Warm the tortillas in a separate pan over low heat or in the microwave for 15-20 seconds.
- Divide the spiced vegetable mixture evenly among the warm tortillas. Roll them up tightly to form the wraps.
