Ripe mangoes
2 large, peeled and diced
Red onion
1 small, finely chopped
Fresh ginger
1 tablespoon, grated
Garlic
2 cloves, minced
Red chili pepper
1, finely chopped (adjust to taste)
White vinegar
1/2 cup
Brown sugar
1/4 cup
Ground cumin
1 teaspoon
Ground coriander
1 teaspoon
Salt
1/2 teaspoon

Instructions

  1. In a medium saucepan, combine the diced mangoes, finely chopped red onion, grated ginger, minced garlic, and chopped red chili pepper.
  2. Add the white vinegar, brown sugar, ground cumin, ground coriander, and salt to the saucepan. Stir the mixture well to ensure the mangoes are evenly coated with the spices.
  3. Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
