- Ripe mangoes
- 2 large, peeled and diced
- Red onion

- 1 tablespoon, grated
- Garlic
- 2 cloves, minced
- Red chili pepper
- 1, finely chopped (adjust to taste)
- White vinegar
- 1/2 cup
- Brown sugar
- 1/4 cup
- Ground cumin
- 1 teaspoon
- Ground coriander
- 1 teaspoon
- Salt
- 1/2 teaspoon
Instructions
- In a medium saucepan, combine the diced mangoes, finely chopped red onion, grated ginger, minced garlic, and chopped red chili pepper.
- Add the white vinegar, brown sugar, ground cumin, ground coriander, and salt to the saucepan. Stir the mixture well to ensure the mangoes are evenly coated with the spices.
- Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
- Once boiling, reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the mangoes are soft and the chutney has thickened to your desired consistency.
- Remove the saucepan from heat and allow the chutney to cool completely at room temperature.
