Indulge in a burst of flavors with our Spicy Pastrami and Cheese Empanadas, a Latin American classic with a twist. Encased in a crisp, golden empanada shell is a rich filling of succulent pastrami, sharp cheddar cheese, and fiery jalapeno. Perfect to jazz up your parties or simply to satiate your midday cravings. This hearty snack traces its roots back to Spain and has since become a staple in many Latin American cuisines.

Serves 8

Ingredients

Salt
to taste
Black Pepper
to taste
Egg
1, beaten (for egg wash)
Empanada Dough
1 batch
Jalapeno
1, finely chopped
Cheddar Cheese
1 cup, shredded
Pastrami
1 cup, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the chopped pastrami, shredded cheese, and finely chopped jalapeno. Season the mixture with salt and black pepper according to your taste.
  3. Roll out the empanada dough on a lightly floured surface. Using a round cutter, cut out disc shapes for the empanadas.
  4. Place a generous spoonful of the pastrami mixture onto the center of each empanada disc.
  5. Fold the disc in half over the filling, creating a semi-circle. Seal the edges by crimping with a fork.
  6. Place the formed empanadas on a baking sheet. Brush the tops of the empanadas with the beaten egg. This will give them a beautiful golden color when baked.
  7. Bake the empanadas for approximately 20 minutes, or until they turn golden brown.
  8. Allow the empanadas to cool for a few minutes before serving. Enjoy them while they're warm!

Tips

  • 💡 You can use store-bought empanada dough if you're short on time. Just make sure it's thawed properly before using.
  • 💡 Feel free to adjust the quantity of jalapeno to suit your spice preference.
