Spicy Pastrami and Cheese Empanadas

- 1 batch Empanada Dough
- 1, finely chopped Jalapeno
- 1 cup, shredded Cheddar Cheese
- 1 cup, chopped Pastrami

Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the chopped pastrami, shredded cheese, and finely chopped jalapeno. Season the mixture with salt and black pepper according to your taste.
- Roll out the empanada dough on a lightly floured surface. Using a round cutter, cut out disc shapes for the empanadas.
- Place a generous spoonful of the pastrami mixture onto the center of each empanada disc.
- Fold the disc in half over the filling, creating a semi-circle. Seal the edges by crimping with a fork.
- Place the formed empanadas on a baking sheet. Brush the tops of the empanadas with the beaten egg. This will give them a beautiful golden color when baked.
- Bake the empanadas for approximately 20 minutes, or until they turn golden brown.
- Allow the empanadas to cool for a few minutes before serving. Enjoy them while they're warm!

- You can use store-bought empanada dough if you're short on time. Just make sure it's thawed properly before using.
