Original recipe serves 4

Extra firm tofu
1 block, drained and cut into cubes
Vegetable oil
2 tablespoons
Garlic
2 cloves, minced
Mixed Vegetables
2 cups (can include bell peppers, snow peas, broccoli, carrots)
Peanut butter
1/3 cup
Soy sauce
1/4 cup
Sriracha
1 tablespoon (adjust to taste)
Lime juice
1 tablespoon
Brown sugar
2 tablespoons
Cornstarch
1 tablespoon, dissolved in 2 tablespoons of water

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the tofu cubes and cook until they turn golden on all sides. This should take about 5-7 minutes. Once done, remove the tofu from the pan and set it aside.
  2. In the same pan, add the minced garlic and mixed vegetables. Stir-fry until the vegetables become tender-crisp, which should take about 5 minutes.
  3. While the vegetables are cooking, prepare the sauce. In a small bowl, whisk together the peanut butter, soy sauce, sriracha, lime juice, and brown sugar until well combined.
  4. Pour the sauce into the pan with the vegetables. Stir well to ensure the vegetables are coated in the sauce.
  5. Add the cornstarch-water mixture to the pan. Stir continuously as the sauce will start to thicken.
  6. Return the tofu to the pan. Stir well so that the tofu cubes are coated in the sauce. Let everything cook together for an additional 2-3 minutes until heated through.
