Spicy Peanut Tofu Stir Fry

Ingredients
- 1 block, drained and cut into cubes Extra firm tofu
- 2 tablespoons Vegetable oil
- 2 cloves, minced Garlic
- 2 cups (can include bell peppers, snow peas, broccoli, carrots) Mixed Vegetables
- 1/3 cup Peanut butter
- 1/4 cup Soy sauce
- 1 tablespoon (adjust to taste) Sriracha
- 1 tablespoon Lime juice
- 2 tablespoons Brown sugar
- 1 tablespoon, dissolved in 2 tablespoons of water Cornstarch

Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the tofu cubes and cook until they turn golden on all sides. This should take about 5-7 minutes. Once done, remove the tofu from the pan and set it aside.
- In the same pan, add the minced garlic and mixed vegetables. Stir-fry until the vegetables become tender-crisp, which should take about 5 minutes.
- While the vegetables are cooking, prepare the sauce. In a small bowl, whisk together the peanut butter, soy sauce, sriracha, lime juice, and brown sugar until well combined.
- Pour the sauce into the pan with the vegetables. Stir well to ensure the vegetables are coated in the sauce.
- Add the cornstarch-water mixture to the pan. Stir continuously as the sauce will start to thicken.
- Return the tofu to the pan. Stir well so that the tofu cubes are coated in the sauce. Let everything cook together for an additional 2-3 minutes until heated through.
