Fresh sushi-grade tuna
8 ounces, diced
Mayonnaise
2 tablespoons
Sriracha sauce
1 tablespoon
Soy sauce
1 tablespoon
Rice vinegar
1 tablespoon
Sugar
1 teaspoon
Sushi rice
2 cups, cooked and seasoned
Seaweed sheets (nori)
4 sheets
Cucumber
1, julienned
Avocado
1, sliced
Wasabi
to taste, for serving
Pickled ginger
to taste, for serving
Soy sauce
for dipping

Instructions

  1. In a mixing bowl, combine the diced tuna, mayonnaise, sriracha sauce, soy sauce, rice vinegar, and sugar. Stir gently until well mixed, being careful not to break up the tuna too much.
  2. Lay a sheet of nori shiny-side down on a clean, flat surface or bamboo sushi mat.
  3. With wet hands, spread a thin layer of sushi rice over the nori, leaving about a 1-inch border at the top edge.
  4. Spoon a generous amount of the spicy tuna mixture onto the rice, placing it closer to the bottom edge of the nori.
  5. Top the tuna with a few sticks of julienned cucumber and slices of avocado.
  6. Starting from the bottom, roll the sushi tightly while tucking in the filling. Use the border of nori at the top to seal the roll.
  7. Continue rolling until the entire sheet is rolled up. Repeat with the remaining ingredients.
  8. Using a sharp knife, slice each roll into bite-sized pieces, wiping the knife with a damp cloth between cuts for clean edges.
  9. Serve the Spicy Tuna Hand Rolls with spicy mayo, soy sauce, pickled ginger, and wasabi on the side for dipping.
