Ingredients
- Fresh sushi-grade tuna
- 8 ounces, diced
- Mayonnaise
- 2 tablespoons
- Sriracha sauce
- 1 tablespoon
- Soy sauce
- 1 tablespoon
- Rice vinegar
- 1 tablespoon
- Sugar
- 1 teaspoon
- Sushi rice
- 2 cups, cooked and seasoned
- Seaweed sheets (nori)
- 4 sheets
- Cucumber
- 1, julienned
- Avocado
- 1, sliced
- Wasabi

- Pickled ginger
- to taste, for serving
- Soy sauce
- for dipping
Instructions
- In a mixing bowl, combine the diced tuna, mayonnaise, sriracha sauce, soy sauce, rice vinegar, and sugar. Stir gently until well mixed, being careful not to break up the tuna too much.
- Lay a sheet of nori shiny-side down on a clean, flat surface or bamboo sushi mat.
- With wet hands, spread a thin layer of sushi rice over the nori, leaving about a 1-inch border at the top edge.
- Spoon a generous amount of the spicy tuna mixture onto the rice, placing it closer to the bottom edge of the nori.
- Top the tuna with a few sticks of julienned cucumber and slices of avocado.
- Starting from the bottom, roll the sushi tightly while tucking in the filling. Use the border of nori at the top to seal the roll.
- Continue rolling until the entire sheet is rolled up. Repeat with the remaining ingredients.
- Using a sharp knife, slice each roll into bite-sized pieces, wiping the knife with a damp cloth between cuts for clean edges.
- Serve the Spicy Tuna Hand Rolls with spicy mayo, soy sauce, pickled ginger, and wasabi on the side for dipping.
