Indulge in this irresistibly creamy Spinach and Artichoke Mac and Cheese. It's a luxurious blend of tender spinach and hearty artichokes, swirled into perfectly cooked macaroni and smothered with a rich, cheesy sauce. Ingredients

Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste
Artichoke hearts
1 cup, drained and chopped
Spinach
2 cups, fresh or frozen
Mozzarella cheese
2 cups, divided
Parmesan cheese
1 cup, grated
Cream cheese
1/2 cup, softened
Milk
2 cups
Flour
2 tablespoons
Garlic
2 cloves, minced
Butter
2 tablespoons
Macaroni
8 oz

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the macaroni in salted boiling water according to the package instructions until al dente. Drain and set aside.
  3. In a large pot over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the flour to the pot and stir to create a roux. Cook for another minute.
  5. Gradually whisk in the milk until there are no lumps and the mixture is smooth.
  6. Add the softened cream cheese to the pot and stir until it has melted into the sauce.
  7. Add the grated Parmesan cheese and half of the mozzarella cheese to the pot. Stir until the cheese has melted and the sauce is smooth.
  8. Add the chopped spinach and artichoke hearts to the pot. Stir until they are coated in the sauce. Season with salt and black pepper to taste.
  9. Add the cooked macaroni to the pot and stir until it is fully coated in the spinach and artichoke sauce.
  10. Transfer the macaroni and cheese mixture to a baking dish. Sprinkle the remaining mozzarella cheese over the top.
  11. Bake for 20 minutes, or until the cheese on top is melted and bubbly. Let it cool for a few minutes before serving.
