Spinach and Artichoke Mac and Cheese

Ingredients
- Salt
- 1 teaspoon, or to taste
- Black pepper
- 1/2 teaspoon, or to taste
- Artichoke hearts
- 1 cup, drained and chopped
- Spinach
- 2 cups, fresh or frozen
- Mozzarella cheese
- 2 cups, divided
- Parmesan cheese
- 1 cup, grated
- Cream cheese
- 1/2 cup, softened
- Milk
- 2 cups
- Flour
- 2 tablespoons
- Garlic
- 2 cloves, minced
- Butter
- 2 tablespoons
- Macaroni
- 8 oz
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the macaroni in salted boiling water according to the package instructions until al dente. Drain and set aside.
- In a large pot over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the flour to the pot and stir to create a roux. Cook for another minute.
- Gradually whisk in the milk until there are no lumps and the mixture is smooth.
- Add the softened cream cheese to the pot and stir until it has melted into the sauce.
- Add the grated Parmesan cheese and half of the mozzarella cheese to the pot. Stir until the cheese has melted and the sauce is smooth.
- Add the chopped spinach and artichoke hearts to the pot. Stir until they are coated in the sauce. Season with salt and black pepper to taste.
- Add the cooked macaroni to the pot and stir until it is fully coated in the spinach and artichoke sauce.
- Transfer the macaroni and cheese mixture to a baking dish. Sprinkle the remaining mozzarella cheese over the top.
- Bake for 20 minutes, or until the cheese on top is melted and bubbly. Let it cool for a few minutes before serving.
