
Spinach and Artichoke Mac and Cheese
A creamy and delicious combination of spinach, artichokes, and macaroni, topped with a generous layer of cheese.
Ingredients
- Salt and pepper (to taste)
- Artichoke hearts (1 cup, chopped)
- Spinach (2 cups, chopped)
- Mozzarella cheese (1 cup, shredded)
- Parmesan cheese (1 cup, grated)
- Cream cheese (4 ounces)
- Milk (2 cups)
- Flour (2 tablespoons)
- Garlic (2 cloves, minced)
- Butter (2 tablespoons)
- Macaroni (2 cups)
Instructions
- Preheat your oven to 375°F.
- Cook the macaroni according to the package instructions, then drain and set aside.
- In a large pot, melt the butter over medium heat. Add the garlic and cook until fragrant.
- Stir in the flour to create a roux, then gradually whisk in the milk until smooth.
- Add the cream cheese and stir until melted.
- Stir in the Parmesan and half of the mozzarella until melted, then add the spinach, artichokes, salt, and pepper.
- Add the cooked macaroni to the pot and stir until well coated in the sauce.
- Transfer the mixture to a baking dish and top with the remaining mozzarella.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
