Ingredients

Original recipe serves 6

Frozen puff pastry
1 sheet, thawed
Olive oil
2 tablespoons
Onions
2 medium, thinly sliced
Garlic
2 cloves, minced
Fresh spinach
8 cups, packed
Eggs
3 large
Milk
1/2 cup
Grated Parmesan cheese
1 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the thawed puff pastry sheet on a lightly floured surface, then press it into a tart pan, trimming any excess pastry hanging over the edges.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they become soft and caramelized, about 15 minutes. If they begin to brown too quickly, reduce the heat.
  4. Add the minced garlic to the skillet and cook for an additional 2 minutes, stirring until fragrant.
  5. Add the fresh spinach to the skillet and cook until wilted, about 5 minutes. Remove from heat and allow to cool slightly.
  6. In a separate bowl, whisk together the eggs, milk, grated Parmesan cheese, salt, and black pepper until well combined.
  7. Spread the caramelized onion and spinach mixture evenly over the puff pastry crust.
  8. Pour the egg mixture over the vegetables, ensuring an even distribution.
  9. Bake in the preheated oven for 25-30 minutes, or until the tart is golden brown and the filling is set.
  10. Remove from the oven and let cool for a few minutes before slicing and serving.

Tips

  • 💡 For added flavor, consider mixing in some crumbled feta cheese or goat cheese with the spinach and onion mixture.
  • 💡 This tart can be made ahead of time and tastes great served cold or at room temperature.
  • 💡 Feel free to experiment with other vegetables, such as mushrooms or bell peppers, for a unique twist.
