Spinach and Fennel Soup

Ingredients

  • Salt and pepper (to taste)
  • Lemon juice (2 tablespoons)
  • Vegetable broth (4 cups)
  • Spinach (8 cups, chopped)
  • Garlic (2 cloves, minced)
  • Onion (1, chopped)
  • Fennel bulb (1, thinly sliced)
  • Olive oil (2 tablespoons)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the fennel, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the spinach and cook until wilted, about 3 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Stir in the lemon juice and season with salt and pepper to taste.
  7. Serve hot and enjoy!
