
Spinach and Fennel Soup
This healthy and flavorful spinach and fennel soup is packed with nutrients and deliciousness.
Ingredients
- Salt and pepper (to taste)
- Lemon juice (2 tablespoons)
- Vegetable broth (4 cups)
- Spinach (8 cups, chopped)
- Garlic (2 cloves, minced)
- Onion (1, chopped)
- Fennel bulb (1, thinly sliced)
- Olive oil (2 tablespoons)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the fennel, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the spinach and cook until wilted, about 3 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Stir in the lemon juice and season with salt and pepper to taste.
