Ingredients

Flatbread
4 (store-bought or homemade)
Fresh spinach
4 cups, washed and chopped
Feta cheese
1 cup, crumbled
Kalamata olives
1/2 cup, pitted and sliced
Cherry tomatoes
1 cup, halved
Red onion
1/2 medium, thinly sliced
Garlic
2 cloves, minced
Olive oil
2 tablespoons
Dried oregano
1 teaspoon
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  4. On a baking sheet, lay out the flatbreads. Spread the cooked spinach mixture evenly over each flatbread.
  5. Sprinkle crumbled feta cheese evenly over the spinach, followed by the sliced red onion, halved cherry tomatoes, and Kalamata olives.
  6. Season the toppings with dried oregano, salt, and pepper to enhance the flavor.
  7. Bake in the preheated oven for 10-12 minutes, or until the flatbread is crispy and the cheese is melted.
  8. Remove from the oven and allow to cool slightly before slicing into wedges.
  9. Serve warm, garnished with a drizzle of extra virgin olive oil if desired, and enjoy!
