
Spinach and Feta Frittata

Ingredients
- Salt and pepper (to taste)
- Olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Onion (1, diced)
- Milk (1/4 cup)
- Eggs (8)
- Feta cheese (1 cup, crumbled)
- Spinach (4 cups, fresh)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the spinach and onion mixture in the skillet.
- Sprinkle the crumbled feta cheese evenly over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and golden brown on top.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
