Fresh spinach
2 cups, chopped

  2. Heat olive oil in a non-stick skillet over medium heat, ensuring the pan is evenly coated.
  3. Add the chopped spinach to the skillet and sauté for about 2-3 minutes, or until wilted and tender.
  4. Pour the beaten eggs over the sautéed spinach in the skillet, tilting the pan to distribute the eggs evenly.
  5. Allow the omelette to cook for 2-3 minutes, or until the edges begin to set and the center is slightly runny.
  6. Sprinkle the crumbled feta cheese evenly over one half of the omelette.
  7. Using a spatula, carefully fold the other half of the omelette over the cheese, creating a semi-circle.
  8. Cook for an additional 1-2 minutes, or until the cheese has melted and the omelette is cooked through but still moist.
  9. Gently slide the omelette onto a plate and serve hot, garnished with extra spinach or herbs if desired.
