Ingredients
- Large mushrooms
- 12, stems removed
- Fresh spinach
- 2 cups, chopped
- Feta cheese
- 1 cup, crumbled
- Garlic
- 3 cloves, minced
- Olive oil
- 2 tablespoons
- Fresh parsley
- 1/4 cup, chopped
- Salt
- to taste
- Black pepper
- to taste
- Parmesan cheese
- 1/4 cup, grated (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully remove the stems from the mushrooms and set them aside. Finely chop the stems to add to the filling for extra flavor.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach along with the chopped mushroom stems to the skillet. Cook until the spinach is wilted and the mushrooms have released their moisture, about 3-4 minutes.
- Remove from heat and let the mixture cool slightly.
- In a mixing bowl, combine the cooked spinach and mushroom mixture, crumbled feta cheese, chopped parsley, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Stuff each mushroom cap generously with the spinach and feta mixture, pressing gently to pack it in.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper. If desired, sprinkle grated Parmesan cheese on top for added flavor.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
- Serve hot and enjoy the burst of flavors!
Tips
- For a spicier kick, add a pinch of crushed red pepper flakes to the filling.
- These mushrooms can also be made ahead of time. Assemble them and refrigerate until ready to bake, adding a few extra minutes to the baking time.
- Experiment with other cheeses like goat cheese or mozzarella for a different flavor profile.
