Savory Spinach and Feta Stuffed Mushrooms

Ingredients

  • Large mushrooms (12, stems removed)
  • Fresh spinach (2 cups, chopped)
  • Feta cheese (1 cup, crumbled)
  • Garlic (3 cloves, minced)
  • Olive oil (2 tablespoons)
  • Fresh parsley (1/4 cup, chopped)
  • Salt (to taste)
  • Black pepper (to taste)
  • Parmesan cheese (1/4 cup, grated (optional, for topping))

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully remove the stems from the mushrooms and set them aside. Finely chop the stems to add to the filling for extra flavor.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chopped spinach along with the chopped mushroom stems to the skillet. Cook until the spinach is wilted and the mushrooms have released their moisture, about 3-4 minutes.
  5. Remove from heat and let the mixture cool slightly.
  6. In a mixing bowl, combine the cooked spinach and mushroom mixture, crumbled feta cheese, chopped parsley, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  7. Stuff each mushroom cap generously with the spinach and feta mixture, pressing gently to pack it in.
  8. Place the stuffed mushrooms on a baking sheet lined with parchment paper. If desired, sprinkle grated Parmesan cheese on top for added flavor.
  9. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
