- 2 cups, chopped Fresh spinach
- 1 cup, crumbled Feta cheese
- 3 cloves, minced Garlic

Instructions
- Preheat your oven to 375°F (190°C).
- Carefully remove the stems from the mushrooms and set them aside. Finely chop the stems to add to the filling for extra flavor.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach along with the chopped mushroom stems to the skillet. Cook until the spinach is wilted and the mushrooms have released their moisture, about 3-4 minutes.
- Remove from heat and let the mixture cool slightly.
- In a mixing bowl, combine the cooked spinach and mushroom mixture, crumbled feta cheese, chopped parsley, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Stuff each mushroom cap generously with the spinach and feta mixture, pressing gently to pack it in.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper. If desired, sprinkle grated Parmesan cheese on top for added flavor.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
