Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted. Season with salt, black pepper, and red pepper flakes if using.
- Add the drained linguine to the skillet, tossing to combine with the spinach and garlic. If the pasta seems dry, add a little reserved pasta water to help create a light sauce.
- Remove from heat and stir in the grated Parmesan cheese until melted and combined. Adjust seasoning if necessary.
- Serve hot, garnished with additional Parmesan and a drizzle of olive oil for added flavor.
Tips
- For an extra burst of flavor, consider adding a squeeze of fresh lemon juice or a sprinkle of lemon zest before serving.
- You can easily make this dish vegan by omitting the Parmesan cheese or using a plant-based alternative.
- Feel free to add other vegetables such as cherry tomatoes or mushrooms for added texture and taste.
