Spinach and Gorgonzola Pasta

Ingredients
- Pasta
- 500g
- Salt

- Heavy cream
- 1 cup
- Gorgonzola cheese
- 200g, crumbled
- Spinach
- 300g, fresh
- Parmesan cheese
- 1/2 cup, grated
Instructions
- Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.
- Meanwhile, in a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, or until fragrant.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Be careful not to overcook to maintain the vibrant green color.
- Reduce the heat to low and add the crumbled Gorgonzola cheese and heavy cream to the skillet. Stir until the cheese is melted and the sauce is creamy.
- Season the sauce with salt and black pepper to taste. Remember, Gorgonzola is naturally salty, so go easy on the salt.
- Add the cooked pasta to the skillet and toss to coat it with the sauce. Make sure all pasta is evenly coated with this creamy goodness.
- Serve the Spinach and Gorgonzola Pasta hot. Garnish with a generous sprinkle of grated Parmesan cheese on top. A glass of white wine on the side would make this meal even more enjoyable!
Tips
