Servings: 4

Ingredients

Pasta
500g
Salt
to taste
Black pepper
to taste
Unsalted butter
2 tablespoons
Garlic
3 cloves, minced
Heavy cream
1 cup
Gorgonzola cheese
200g, crumbled
Spinach
300g, fresh
Parmesan cheese
1/2 cup, grated

Instructions

  1. Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.
  2. Meanwhile, in a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, or until fragrant.
  3. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Be careful not to overcook to maintain the vibrant green color.
  4. Reduce the heat to low and add the crumbled Gorgonzola cheese and heavy cream to the skillet. Stir until the cheese is melted and the sauce is creamy.
  5. Season the sauce with salt and black pepper to taste. Remember, Gorgonzola is naturally salty, so go easy on the salt.
  6. Add the cooked pasta to the skillet and toss to coat it with the sauce. Make sure all pasta is evenly coated with this creamy goodness.
  7. Serve the Spinach and Gorgonzola Pasta hot. Garnish with a generous sprinkle of grated Parmesan cheese on top. A glass of white wine on the side would make this meal even more enjoyable!
