Ingredients

  • Bread (4 slices (sourdough, whole grain, or your choice))
  • Gouda cheese (4 slices (or shredded, about 1 cup))
  • Fresh spinach (2 cups, washed and roughly chopped)
  • Unsalted butter (4 tablespoons, softened)
  • Garlic powder (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Olive oil (1 tablespoon (optional, for sautéing spinach))

Instructions

  1. In a skillet over medium heat, add olive oil (if using) and sauté the fresh spinach for 2-3 minutes until wilted. Remove from heat and set aside.
  2. In a small bowl, combine the softened butter, garlic powder, salt, and black pepper. Mix well to create a seasoned butter spread.
  3. Spread the butter mixture generously on one side of each slice of bread.
  4. Place two slices of bread, buttered side down, onto the skillet or griddle.
  5. Layer each slice with a slice of Gouda cheese, followed by half of the sautéed spinach, and then top with another slice of Gouda cheese.
  6. Cover with a second slice of bread, buttered side up.
  7. Cook the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melting and gooey.
  8. Remove from the heat and let the sandwiches cool for a minute before cutting them in half.
