Spinach and Mushroom Frittata

Ingredients
- Olive oil (2 tablespoons)
- Mushrooms (1 cup, sliced)
- Fresh spinach (2 cups, chopped)
- Eggs (6 large)
- Milk (1/4 cup)
- Salt (1/2 teaspoon)
- Black pepper (1/4 teaspoon)
- Shredded cheese (cheddar or mozzarella) (1 cup)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the sliced mushrooms to the skillet and cook for about 5 minutes, or until they release their moisture and start to brown.
- Stir in the chopped spinach and cook until wilted, approximately 2 minutes.
