Olive oil
2 tablespoons
Mushrooms
1 cup, sliced
Fresh spinach
2 cups, chopped
Eggs
6 large
Milk
1/4 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Shredded cheese (cheddar or mozzarella)
1 cup

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat.
  3. Add the sliced mushrooms to the skillet and cook for about 5 minutes, or until they release their moisture and start to brown.
  4. Stir in the chopped spinach and cook until wilted, approximately 2 minutes.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until combined.
  6. Pour the egg mixture evenly over the sautéed mushrooms and spinach in the skillet.
  7. Sprinkle the shredded cheese evenly across the top of the frittata.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the cheese is melted and golden.
  9. Remove from the oven and allow to cool for a few minutes before slicing into wedges and serving.
