Instructions
- Preheat the oven to 375°F (190°C).
- Gently roll out the pie crust and press it into a 9-inch pie dish. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until they become translucent and aromatic.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender.
- Stir in the spinach and continue to cook until it wilts. Remove the skillet from heat and let the mixture cool slightly.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Spread the cooled spinach and mushroom mixture evenly over the pie crust.
- Pour the whisked egg mixture over the vegetables, ensuring it permeates through the spinach and mushrooms.
- Sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the crust turns a lovely golden brown.
- Allow the quiche to cool for a few minutes before slicing. This helps it to set and makes slicing easier. Serve warm and enjoy.
