
Spinach and Mushroom Stuffed Pork Loin

Ingredients
- Salt and pepper (to taste)
- Olive oil (2 tablespoons)
- Breadcrumbs (1/2 cup)
- Parmesan cheese (1/2 cup, grated)
- Garlic (3 cloves, minced)
- Mushrooms (1 cup, sliced)
- Spinach (2 cups, chopped)
- Pork loin (2 pounds)
Instructions
- Preheat the oven to 375°F.
- Butterfly the pork loin by making a lengthwise cut down the center, without cutting all the way through.
- Open up the pork loin and flatten it with a meat mallet until it is an even thickness.
- In a skillet, heat the olive oil over medium heat.
- Add the mushrooms and garlic, and cook until the mushrooms are tender and any liquid has evaporated.
- Add the chopped spinach and cook until wilted.
- Remove the skillet from heat and stir in the grated Parmesan cheese and breadcrumbs.
- Season the pork loin with salt and pepper.
- Spread the spinach and mushroom mixture evenly over the pork loin.
- Roll up the pork loin tightly and secure with kitchen twine.
- Place the stuffed pork loin on a baking sheet and roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F.
- Remove from the oven and let the pork loin rest for 10 minutes before slicing.
- Slice the stuffed pork loin and serve.
