Ingredients

Pasta
8 ounces (such as penne or fusilli)
Olive oil
2 tablespoons
Garlic
3 cloves, minced
Fresh spinach
4 cups, packed
Sun dried tomatoes
1/2 cup, chopped (packed in oil for extra flavor)
Parmesan cheese
1/2 cup, grated, plus more for serving
Salt
to taste
Black pepper
to taste

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic to the skillet and sauté until fragrant, about 1 minute, stirring frequently to prevent burning.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes, stirring occasionally.
  5. Stir in the chopped sun dried tomatoes and cooked pasta, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  6. Remove from heat and sprinkle the grated Parmesan cheese over the pasta. Toss until everything is well coated.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with additional Parmesan cheese if desired.
