Spinach and Sun Dried Tomato Pasta

Ingredients
- 8 ounces (such as penne or fusilli) Pasta
- 2 tablespoons Olive oil
- 3 cloves, minced Garlic
- 4 cups, packed Fresh spinach
- 1/2 cup, chopped (packed in oil for extra flavor) Sun dried tomatoes
- 1/2 cup, grated, plus more for serving Parmesan cheese

Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic to the skillet and sauté until fragrant, about 1 minute, stirring frequently to prevent burning.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes, stirring occasionally.
- Stir in the chopped sun dried tomatoes and cooked pasta, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Remove from heat and sprinkle the grated Parmesan cheese over the pasta. Toss until everything is well coated.
- Season with salt and black pepper to taste.
- Serve hot, garnished with additional Parmesan cheese if desired.
