
Spinach and Sun Dried Tomato Pasta
This delicious pasta dish combines fresh spinach, flavorful sun dried tomatoes, and savory Parmesan cheese.
Ingredients
- Salt and pepper (to taste)
- Parmesan cheese (1/2 cup, grated)
- Sun dried tomatoes (1/2 cup, chopped)
- Spinach (4 cups, fresh)
- Garlic (3 cloves, minced)
- Olive oil (2 tablespoons)
- Pasta (8 ounces)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Stir in the sun dried tomatoes and cooked pasta. Cook for an additional 2 minutes to heat through.
- Remove from heat and sprinkle with grated Parmesan cheese.
- Season with salt and pepper to taste.
