Servings: 4
Ingredients
- Parmesan cheese
- 1/2 cup, freshly grated
- Salt

- Black pepper
- to taste
- Red pepper flakes
- 1/4 teaspoon
- Dried oregano
- 1/2 teaspoon
- White beans
- 1 can (15.5 oz), drained and rinsed
- Spinach
- 4 cups, fresh
- Garlic
- 3 cloves, minced
- Olive oil
- 2 tablespoons
- Pasta
- 8 oz
Instructions
- Cook pasta according to package instructions until al dente. Once cooked, drain and set aside, reserving some pasta water for later.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic, cooking until it turns a golden brown and releases a fragrant aroma, about 1 minute.
- Add the fresh spinach to the skillet, stirring occasionally until wilted, about 2-3 minutes.
- Stir in the white beans, dried oregano, red pepper flakes, and season with salt and pepper. Cook for another 2 minutes, ensuring beans are heated through.
- Add the cooked pasta to the skillet and toss to combine with the spinach and white bean mixture. If needed, add a small amount of the reserved pasta water to create a light sauce.
- Remove from heat and sprinkle with freshly grated Parmesan cheese. Toss once more to allow the cheese to melt slightly.
- Serve immediately while hot. Enjoy this delightful twist on a classic Italian dish!
