Crispy Spinach Cashew Pakoras

- 2 cloves, minced Garlic
- 1 inch piece, grated Ginger
- 1, finely chopped (adjust to taste) Green chili
- 1 small, finely chopped Onion
- 1/2 cup Rice flour
- 1 cup Chickpea flour (besan)
- 1/2 cup, roughly chopped Cashews
- 2 cups, chopped Spinach

Instructions
- In a large mixing bowl, combine the chopped spinach, cashews, chickpea flour, rice flour, onion, green chili, ginger, garlic, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Stir well to combine all the ingredients.
- Gradually add water, a little at a time, mixing until you achieve a thick batter consistency that coats the vegetables.
- Heat oil in a deep frying pan or kadai over medium heat until it reaches around 350°F (175°C). To test, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Using a spoon or your hands, drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan. Fry in batches until golden brown and crispy, about 4-5 minutes.
- Remove the pakoras from the oil with a slotted spoon and drain on paper towels to absorb excess oil.
- Serve hot with green chutney or tamarind sauce for dipping.
