Ingredients

Original recipe serves 4

Spinach
2 cups, fresh and washed
All-purpose flour
1 cup
Baking powder
2 teaspoons
Egg
1 large
Milk
1 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Butter
2 tablespoons, melted, plus extra for the skillet

Instructions

  1. Place the spinach, flour, baking powder, egg, milk, salt, and black pepper into a blender.
  2. Blend the mixture until it is smooth and the spinach is fully incorporated. The batter will be a vibrant green color.
  3. Heat a non-stick skillet or griddle over medium heat. Brush the surface with some melted butter.
  4. For each pancake, pour 1/4 cup of the batter onto the preheated skillet.
  5. Allow the pancakes to cook for 2-3 minutes, or until bubbles start to form on the surface.
  6. Flip the pancakes and let them cook on the other side for another 2-3 minutes, or until they are golden brown.
  7. Repeat these steps with the remaining batter, adding more butter to the skillet as needed.
  8. Serve the spinach pancakes warm, topped with your preferred toppings. Enjoy!
