Ingredients
- Spinach
- 2 cups, fresh and washed
- All-purpose flour
- 1 cup
- Baking powder
- 2 teaspoons
- Egg
- 1 large
- Milk
- 1 cup
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Butter
- 2 tablespoons, melted, plus extra for the skillet
Instructions
- Place the spinach, flour, baking powder, egg, milk, salt, and black pepper into a blender.
- Blend the mixture until it is smooth and the spinach is fully incorporated. The batter will be a vibrant green color.
- Heat a non-stick skillet or griddle over medium heat. Brush the surface with some melted butter.
- For each pancake, pour 1/4 cup of the batter onto the preheated skillet.
- Allow the pancakes to cook for 2-3 minutes, or until bubbles start to form on the surface.
- Flip the pancakes and let them cook on the other side for another 2-3 minutes, or until they are golden brown.
- Repeat these steps with the remaining batter, adding more butter to the skillet as needed.
