Sponge Candy

Ingredients
- Granulated sugar
- 1 cup
- Light corn syrup
- 1 cup
- Water
- 1/4 cup
- Baking soda
- 1 tablespoon
- Semi-sweet chocolate chips
- 2 cups
- Vegetable oil
- 1 tablespoon
Instructions
- In a large, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir continuously over medium heat until the sugar is completely dissolved.
- Once the sugar has dissolved, increase the heat to high and let the mixture boil without stirring. Insert a candy thermometer and allow the mixture to reach 300°F (the hard-crack stage). This process may take 10-15 minutes, be sure to watch it carefully to prevent burning.
- Remove the saucepan from heat and immediately, but gently, stir in the baking soda. The mixture will foam up quickly - this is where the sponge texture is created!
- Immediately pour the foamy mixture onto a greased baking sheet, but do not spread it out. Allow it to naturally take its shape and cool completely.
- Once the candy has fully cooled, break it into bite-sized pieces.
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
- Dip each piece of sponge candy into the melted chocolate, ensuring all sides are covered, then place on waxed paper to set. Once the chocolate has hardened, your sponge candy is ready to enjoy!
