
Spring Rolls
These crispy and flavorful vegetable spring rolls are filled with a colorful mix of fresh vegetables and served with a delicious dipping sauce.
Ingredients
- Water (1/4 cup)
- Garlic (1 clove, minced)
- Honey (1 tablespoon)
- Lime juice (1 tablespoon)
- Soy sauce (2 tablespoons)
- Peanut butter (2 tablespoons)
- Cooked vermicelli noodles (1 cup)
- Fresh cilantro leaves (1/2 cup)
- Fresh mint leaves (1/2 cup)
- Red cabbage (1 cup, shredded)
- Bell pepper (1 medium, julienned)
- Cucumber (1 medium, julienned)
- Carrots (1 large, julienned)
- Rice paper wrappers (8 sheets)
Instructions
- Prepare the dipping sauce by combining peanut butter, soy sauce, lime juice, honey, minced garlic, and water in a bowl. Mix well until smooth.
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
- Place the softened rice paper wrapper on a clean surface. Arrange a small amount of julienned carrots, cucumber, bell pepper, red cabbage, mint leaves, cilantro leaves, and vermicelli noodles in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll tightly from the bottom to enclose the filling completely.
- Repeat the process with the remaining rice paper wrappers and filling ingredients.
- Serve the vegetable spring rolls with the prepared dipping sauce.
