Ingredients

Eggs
4, beaten
Bean sprouts
1 cup, rinsed
Green onions
2, chopped
Soy sauce
1 tablespoon
Dill pickle slices
8 slices
Tomato
1, sliced
Lettuce
4 leaves
Mayonnaise
1/4 cup
White onion
1/2, sliced
White bread
8 slices

Instructions

  1. In a mixing bowl, beat the eggs and then stir in the bean sprouts, chopped green onions, and soy sauce until well combined.
  2. Heat a non-stick skillet or frying pan over medium heat and add a drizzle of oil if desired. Pour a quarter of the egg mixture into the skillet, cooking until set, about 3-4 minutes on each side. Repeat with the remaining egg mixture to create four patties.
  3. While the patties are cooking, spread mayonnaise generously on one side of each slice of bread.
  4. On four of the slices, layer a lettuce leaf, a slice of tomato, two dill pickle slices, and a few rings of white onion.
  5. Carefully place one egg foo young patty on top of the onion, then top with the remaining slices of bread, mayonnaise side down.
