Instructions
- Preheat the grill or grill pan to medium-high heat.
- Season the steak generously with salt and black pepper on both sides.
- Grill the steak for about 4-5 minutes per side, or until it reaches your desired doneness. For medium rare, aim for an internal temperature of 130°F (54°C). Let it rest for a few minutes, then slice it thinly against the grain.
- In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 10-15 minutes. Season with salt and pepper to taste.
- In a small bowl, mix together the mayonnaise and Dijon mustard to create a tangy aioli sauce.
- Slice the ciabatta rolls in half horizontally. Spread the aioli sauce generously on one side of each roll.
- Layer the sliced steak, followed by the caramelized onions, provolone cheese, lettuce, and tomato on one half of the roll. Top with the other half of the roll.
- Heat a panini press or skillet over medium heat. Place the sandwich in the press or skillet and cook for 3-4 minutes on each side, until the bread is toasted and the cheese is melted and gooey.
- Remove from heat, slice the sandwich in half, and serve hot with your favorite side.
Tips
- For an extra kick, add sliced jalapeños or a dash of hot sauce to the sandwich.
- If you prefer a smoky flavor, consider using smoked provolone cheese.
- Experiment with different types of bread, such as sourdough or baguette, for a unique twist.
