Ingredients

Mussels
2 pounds, cleaned and debearded
Chorizo sausage
8 ounces, sliced
Onion
1 medium, chopped
Garlic
4 cloves, minced
Tomatoes
2 cups, diced (fresh or canned)
White wine
1 cup (preferably dry white wine)
Chicken broth
1 cup
Fresh parsley
1/4 cup, chopped
Lemon wedges
for serving
Crusty bread
for serving

Instructions

  1. In a large pot or Dutch oven, heat over medium heat.
  2. Add the sliced chorizo sausage and cook until browned and crispy, about 5 minutes. Remove from the pot and set aside, leaving the rendered fat in the pot.
  3. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3 minutes.
  4. Stir in the diced tomatoes, white wine, and chicken broth. Mix well and bring to a simmer.
  5. Carefully add the cleaned mussels to the pot and cover with a lid. Steam for 5-7 minutes, or until the mussels have opened. Discard any unopened mussels.
  6. Return the cooked chorizo to the pot and stir in the chopped parsley until well combined.
  7. Serve the steamed mussels in bowls, garnished with additional parsley, and accompanied by lemon wedges and crusty bread on the side.
