Ingredients
- Mussels
- 2 pounds, cleaned and debearded
- Chorizo sausage
- 8 ounces, sliced
- Onion
- 1 medium, chopped
- Garlic
- 4 cloves, minced
- Tomatoes
- 2 cups, diced (fresh or canned)
- White wine
- 1 cup (preferably dry white wine)
- Chicken broth
- 1 cup
- Fresh parsley
- 1/4 cup, chopped
- Lemon wedges

- Crusty bread
- for serving
Instructions
- In a large pot or Dutch oven, heat over medium heat.
- Add the sliced chorizo sausage and cook until browned and crispy, about 5 minutes. Remove from the pot and set aside, leaving the rendered fat in the pot.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3 minutes.
- Stir in the diced tomatoes, white wine, and chicken broth. Mix well and bring to a simmer.
- Carefully add the cleaned mussels to the pot and cover with a lid. Steam for 5-7 minutes, or until the mussels have opened. Discard any unopened mussels.
- Return the cooked chorizo to the pot and stir in the chopped parsley until well combined.
- Serve the steamed mussels in bowls, garnished with additional parsley, and accompanied by lemon wedges and crusty bread on the side.
