Steelhead Trout with Sweet Caramelized Onions

Experience a symphony of flavors with this elegant dish. Fresh steelhead trout is gently seasoned and topped with sweet and savory caramelized onions for a taste that is truly irresistible. This recipe has been passed down through generations, hailing from the Pacific Northwest where steelhead trout is a beloved local staple. It's a delightful fusion of land and sea that will transport your taste buds straight to the coast.

Ingredients

Steelhead trout fillets
4, about 6 oz each
Extra virgin olive oil
2 tablespoons
Onions
2 large, thinly sliced
Brown sugar
1 tablespoon
Balsamic vinegar
2 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the steelhead trout fillets on both sides with salt and pepper to your preference.
  3. In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring often, until they soften and turn a deep caramel color, about 15-20 minutes.
  4. Stir in the brown sugar and balsamic vinegar to the caramelized onions, allow it to cook for 2 more minutes. This will create a beautiful glaze.
  5. Transfer the caramelized onions to the bottom of a baking dish, creating a bed for the steelhead trout fillets.
  6. Place the seasoned steelhead trout fillets on top of the caramelized onions in the baking dish.
  7. Bake in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
  8. Serve each fillet with a generous helping of caramelized onions on top. Enjoy!

Tips

  • 💡 For a hint of freshness, consider adding a squeeze of lemon juice over the cooked fillets before serving.
  • 💡 Pair with a crisp white wine like Sauvignon Blanc to complement the flavors.
