Ingredients

Steelhead trout fillets
4, about 6 oz each
Extra virgin olive oil
2 tablespoons
Onions
2 large, thinly sliced
Brown sugar
1 tablespoon
Balsamic vinegar
2 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the steelhead trout fillets on both sides with salt and pepper to your preference.
  3. In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring often, until they soften and turn a deep caramel color, about 15-20 minutes.
  4. Stir in the brown sugar and balsamic vinegar to the caramelized onions, allow it to cook for 2 more minutes. This will create a beautiful glaze.
