Steelhead Trout with Sweet Caramelized Onions

Ingredients
- Steelhead trout fillets
- 4, about 6 oz each
- Extra virgin olive oil
- 2 tablespoons
- Onions
- 2 large, thinly sliced
- Brown sugar
- 1 tablespoon
- Balsamic vinegar
- 2 tablespoons
- Salt
- to taste
- Black pepper

Instructions
- Preheat your oven to 400°F (200°C).
- Season the steelhead trout fillets on both sides with salt and pepper to your preference.
- In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring often, until they soften and turn a deep caramel color, about 15-20 minutes.
- Stir in the brown sugar and balsamic vinegar to the caramelized onions, allow it to cook for 2 more minutes. This will create a beautiful glaze.
- Transfer the caramelized onions to the bottom of a baking dish, creating a bed for the steelhead trout fillets.
- Place the seasoned steelhead trout fillets on top of the caramelized onions in the baking dish.
