Ingredients
- Steelhead trout fillets

Instructions
- Preheat your oven to 400°F (200°C).
- Season the steelhead trout fillets on both sides with salt and pepper to your preference.
- In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring often, until they soften and turn a deep caramel color, about 15-20 minutes.
- Stir in the brown sugar and balsamic vinegar to the caramelized onions, allow it to cook for 2 more minutes. This will create a beautiful glaze.
- Transfer the caramelized onions to the bottom of a baking dish, creating a bed for the steelhead trout fillets.
- Place the seasoned steelhead trout fillets on top of the caramelized onions in the baking dish.
- Bake in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
- Serve each fillet with a generous helping of caramelized onions on top. Enjoy!
Tips
- For a hint of freshness, consider adding a squeeze of lemon juice over the cooked fillets before serving.
- Pair with a crisp white wine like Sauvignon Blanc to complement the flavors.
