Stewed Beef Brazilian Style

Ingredients
- 1, juiced Lime
- 1/4 cup, chopped Fresh cilantro
- 1 cup, sliced Green beans
- 2, peeled and sliced Carrots
- 2, peeled and diced Potatoes
- to taste Salt and pepper
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 2 Bay leaves
- 2 cups Beef broth
- 2, diced Tomatoes
- 1, diced Bell pepper
- 3 cloves, minced Garlic
- 1, chopped Onion
- 2 lbs, cut into cubes Beef chuck roast
- 2 tablespoons Olive oil

Instructions
- Heat oil in a large pot over medium heat.
- Add the beef cubes, season with salt and pepper, and cook until browned on all sides. Once browned, remove from the pot and set aside.
- In the same pot, sauté the onion, garlic, and bell pepper until softened.
- Add the diced tomatoes, beef broth, bay leaves, cumin, paprika, oregano, and additional salt and pepper to taste. Stir to combine.
- Return the browned beef to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Add the potatoes, carrots, and green beans to the pot and stir to combine. Cover and continue to simmer for another 30 minutes, or until the vegetables are cooked.
- Remove the bay leaves from the stew.
- Stir in the chopped cilantro and lime juice. Taste the stew and adjust the seasoning if needed.
- Serve hot with a side of rice or crusty bread for an authentic Brazilian meal experience.
Tips
- For a thicker stew, you may add a tablespoon of cornstarch dissolved in a little water towards the end of the cooking time.
