- 4 cloves, minced Garlic
- 2 large, sliced Carrots
- 8 ounces, sliced Button mushrooms
- 4 cups Chicken broth
- 1 Bay leaf
- 1 teaspoon, dried or 1 tablespoon fresh Thyme

Instructions
- Season the chicken thighs generously with salt and pepper.
- Heat the olive oil in a large pot or Dutch oven over medium heat. Once hot, add the chicken thighs and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion, minced garlic, sliced carrots, and mushrooms. Sauté until the vegetables are softened, about 5-6 minutes.
