Instructions
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and grated ginger to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn them.
- Add the julienned carrot, sliced bell pepper, broccoli florets, and snap peas to the pan. Stir fry for 3-4 minutes until the vegetables are crisp-tender and vibrantly colored.
