
Stir Fried Udon Noodles with Vegetables
This delicious stir fry combines thick udon noodles with a variety of colorful vegetables, creating a flavorful and satisfying dish.
Ingredients
- Green onions (2, sliced, for garnish)
- Sesame seeds (1 tablespoon, for garnish)
- Sesame oil (1 tablespoon)
- Soy sauce (3 tablespoons)
- Snap peas (1 cup)
- Broccoli florets (1 cup)
- Bell pepper (1, thinly sliced)
- Carrot (1, julienned)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Vegetable oil (2 tablespoons)
- Udon noodles (8 oz)
Instructions
- Cook the udon noodles according to package instructions. Drain and set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and grated ginger to the pan and sauté for 1-2 minutes until fragrant.
- Add julienned carrot, sliced bell pepper, broccoli florets, and snap peas to the pan. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
- Add the cooked udon noodles to the pan and toss to combine with the vegetables.
- Pour soy sauce and sesame oil over the noodles and vegetables. Stir fry for an additional 2-3 minutes until everything is well coated and heated through.
- Remove from heat and garnish with sesame seeds and sliced green onions.
