Stracciatella Soup

Stracciatella Soup is a warm and comforting Italian classic that showcases the beautiful simplicity of fresh ingredients. This delightful dish features silky strands of eggs swirling in a savory chicken broth, creating a lovely presentation and an even more delightful taste. Originating from the Lazio region, Stracciatella was traditionally a peasant's dish, making use of readily available ingredients to create a nourishing meal. The addition of fresh parsley and grated Parmesan cheese not only enhances the flavor but also adds a vibrant touch to each bowl. Perfect for chilly evenings or when you need a culinary hug, this soup embodies the heart of Italian cooking.

Servings: 4

Ingredients

Chicken broth
6 cups
Large eggs
3
Grated Parmesan cheese
1/2 cup, plus more for serving
Chopped fresh parsley
1/4 cup, plus more for garnish
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil over medium-high heat.
  2. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, chopped parsley, salt, and black pepper until well combined.
  3. Once the broth is boiling, reduce the heat to low. Slowly pour the egg mixture into the hot broth in a thin stream while stirring constantly with a fork or whisk. This technique creates the signature delicate strands of egg.
  4. Continue to stir gently for about 3 minutes, allowing the eggs to cook through and form lovely ribbons in the soup.
  5. Taste the soup and adjust the seasoning with additional salt and pepper as needed.
  6. Serve hot, garnished with extra grated Parmesan cheese and fresh parsley if desired.
