Ingredients

Original recipe serves 4

Fresh strawberries
2 cups, hulled and sliced
Granulated sugar
1/2 cup
Lemon juice
2 tablespoons, freshly squeezed
Water
1/4 cup
Vanilla extract
1 teaspoon

Instructions

  1. In a medium saucepan, combine the sliced strawberries, granulated sugar, lemon juice, water, and vanilla extract.
  2. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to dissolve the sugar.
  3. Once boiling, reduce the heat to low and let the mixture simmer for about 10 minutes. Stir occasionally until the strawberries have softened and the sauce has thickened slightly.
  4. Remove the saucepan from heat and allow the compote to cool for a few minutes. It will thicken further as it cools.
  5. Serve the strawberry compote warm or chilled over your favorite desserts, such as ice cream, pancakes, waffles, or yogurt.
