Stuffed Paratha
Stuffed Paratha is a beloved Indian flatbread, enriched with a flavorful filling of spiced potatoes and herbs. Ingredients
- Whole wheat flour
- 2 cups
- Water
- as needed
- Salt
- 1 teaspoon
- Potatoes
- 2 large, boiled and mashed
- Onion
- 1 medium, finely chopped
- Green chili
- 1, finely chopped (adjust to taste)
- Cilantro
- 1/4 cup, chopped
- Cumin powder
- 1 teaspoon
- Coriander powder
- 1 teaspoon
- Red chili powder
- 1/2 teaspoon (adjust to taste)
- Garam masala
- 1 teaspoon
- Ghee or oil
- for cooking
Instructions
- In a mixing bowl, combine the whole wheat flour, 1 teaspoon of salt, and enough water to form a smooth dough. Knead well and cover the dough with a damp cloth. Let it rest for 15 minutes.
- In a separate bowl, mix together the boiled and mashed potatoes, chopped onion, green chili, cilantro, cumin powder, coriander powder, red chili powder, garam masala, and an additional pinch of salt. Ensure the mixture is well combined.
- Divide the dough into equal-sized balls, about the size of a golf ball.
- Take one ball and roll it out into a small circle on a floured surface.
- Place a generous spoonful of the potato filling in the center of the circle. Bring the edges together, pinching them to seal the filling inside the dough.
- Gently flatten the stuffed ball and roll it out into a paratha, about 6-7 inches in diameter, being careful not to let the filling escape.
- Heat a tawa or griddle over medium heat. Once hot, place the rolled paratha on the tawa.
- Cook for about a minute, or until bubbles start to appear on the surface. Flip the paratha and spread a little ghee or oil on top. Cook for another minute, then flip again and spread ghee or oil on the other side.
- Press the paratha gently with a spatula to ensure it cooks evenly. Continue cooking until both sides are golden brown and crispy.
- Remove from the tawa and repeat the process with the remaining dough and filling.
- Serve hot with yogurt, pickle, or any chutney of your choice.
