
Stuffed Pepper Soup
This hearty soup is packed with all the flavors of stuffed peppers, including ground beef, bell peppers, rice, and tomatoes.
Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Shredded cheese (1/2 cup)
- Salt and pepper (to taste)
- Italian seasoning (1 teaspoon)
- Cooked rice (1 cup)
- Beef broth (4 cups)
- Diced tomatoes (1 can (14.5 ounces))
- Tomato sauce (1 can (15 ounces))
- Bell peppers (2 large, diced)
- Garlic (3 cloves, minced)
- Onion (1 medium, diced)
- Ground beef (1 pound)
- Olive oil (2 tablespoons)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is softened.
- Add the diced bell peppers and cook for another 3-4 minutes.
- Stir in the tomato sauce, diced tomatoes, beef broth, cooked rice, Italian seasoning, salt, and pepper.
- Bring the soup to a simmer and let it cook for 15-20 minutes to allow the flavors to meld together.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with shredded cheese and fresh parsley.
