Ingredients
- Bell peppers (4 large (any color))
- Ground beef (1 pound)
- Cooked rice (1 cup)
- Tomato sauce (1 cup)
- Shredded cheese (1 cup (cheddar or mozzarella))
- Onion (1 medium, diced)
- Garlic (2 cloves, minced)
- Italian seasoning (1 teaspoon)
- Salt (to taste)
- Pepper (to taste)
- Olive oil (2 tablespoons)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is softened and translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Mix well until the ingredients are fully combined and heated through.
- Carefully fill each bell pepper with the beef and rice mixture, pressing down slightly to pack it in.
- Place the stuffed peppers standing upright in a baking dish. Cover the dish with aluminum foil to keep the moisture in.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and sprinkle shredded cheese on top of each stuffed pepper.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
