Suman is a beloved traditional Filipino rice cake that captures the essence of Filipino culinary heritage. Made from glutinous rice steeped in rich coconut milk and delicately wrapped in banana leaves, this delightful treat is both chewy and sweet, making it perfect for breakfast, snacks, or dessert. Its origins can be traced back to pre-colonial Philippines, where it was often enjoyed during festivities and gatherings. Ingredients

Glutinous rice
2 cups, rinsed
Coconut milk
1 cup
White sugar
1/2 cup
Salt
1/4 teaspoon
Water
enough to boil the suman
Banana leaves
10-12 pieces, cut into rectangles

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear to remove excess starch.
  2. In a large bowl, combine the rinsed glutinous rice, coconut milk, white sugar, and salt. Mix well until the rice is evenly coated with the mixture.
  3. Prepare the banana leaves by briefly passing them over an open flame or boiling water to make them pliable. This will make wrapping easier.
  4. Place a banana leaf rectangle on a flat surface. Scoop about 1/4 cup of the rice mixture onto the center of the banana leaf.
  5. Fold the banana leaf over the rice, tucking in the sides to form a neat package. Secure with a toothpick if needed or tie with kitchen twine.
  6. Repeat the process with the remaining rice mixture and banana leaves.
  7. In a large pot, bring water to a boil. Carefully place the wrapped suman in the pot, ensuring they are submerged. Cook for about 45-60 minutes, or until the rice is fully cooked and the suman is firm to the touch.
  8. Remove the suman from the pot and let them cool slightly before serving. They can be enjoyed warm or at room temperature.
