8 sheets
Shrimp
16 large, cooked and peeled
Rice vermicelli noodles
4 ounces, cooked
Lettuce leaves
8 large leaves (butter or romaine)
Fresh cilantro leaves
1/2 cup
Fresh mint leaves
1/2 cup
Red bell pepper
1, julienned
Cucumber
1, julienned
Carrot
1, julienned
Peanut butter
1/4 cup
Soy sauce
2 tablespoons
Honey
1 tablespoon
Lime juice
1 tablespoon
Sriracha
1/2 teaspoon (adjust to taste)

Instructions

  1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it becomes soft and pliable.
  2. Carefully remove the wrapper from the water and lay it flat on a clean, damp surface.
  3. In the center of the wrapper, layer 2 shrimp, a small handful of cooked rice vermicelli noodles, and a few strips each of carrot, cucumber, and red bell pepper.
  4. Add a few fresh mint leaves, cilantro leaves, and a lettuce leaf for added freshness.
  5. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top, ensuring the filling is secure. Repeat the process with the remaining ingredients to make a total of 8 summer rolls.
  6. For the spicy peanut dipping sauce, in a small bowl, combine peanut butter, soy sauce, honey, lime juice, and sriracha. Whisk together until smooth and creamy. Adjust the sriracha to your desired level of spiciness.
