- 4 ounces, cooked Rice vermicelli noodles
- 8 large leaves (butter or romaine) Lettuce leaves
- 1/2 cup Fresh cilantro leaves
- 1/2 cup Fresh mint leaves
- 1, julienned Red bell pepper
- 1, julienned Cucumber
- 1, julienned Carrot
- 1/4 cup Peanut butter
- 2 tablespoons Soy sauce
- 1 tablespoon Honey
- 1 tablespoon Lime juice
- 1/2 teaspoon (adjust to taste) Sriracha

Instructions
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it becomes soft and pliable.
- Carefully remove the wrapper from the water and lay it flat on a clean, damp surface.
- In the center of the wrapper, layer 2 shrimp, a small handful of cooked rice vermicelli noodles, and a few strips each of carrot, cucumber, and red bell pepper.
