Ingredients

Chicken breasts
4, boneless and skinless
Salt
to taste
Black pepper

All-purpose flour
1 cup
Eggs
2, beaten
Breadcrumbs
1 1/2 cups, preferably seasoned
Vegetable oil
1/2 cup, for frying
Lemon wedges
for serving
Parsley
for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Set up a dredging station: In one shallow dish, place the flour. In a second shallow dish, beat the eggs. In a third shallow dish, add the breadcrumbs.
  4. Dredge each chicken breast in the flour, ensuring it is well-coated. Dip it into the beaten eggs, allowing excess to drip off, and then coat it with breadcrumbs, pressing gently to adhere.
  5. In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the breaded chicken breasts.
  6. Fry the chicken for about 3-4 minutes on each side, or until they are golden brown and crispy.
  7. Transfer the chicken breasts to a baking dish and place them in the preheated oven. Bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Remove from the oven and let rest for a few minutes. Serve the Suprema a La Maryland with lemon wedges on the side and garnish with parsley if desired.
