Servings: 4

Ingredients

Chicken breast
1 pound, cut into bite-sized pieces
Cornstarch
1/2 cup
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Vegetable oil
1/4 cup
Bell peppers
2 cups, sliced (mix of red, green, and yellow)
Pineapple chunks
1 cup, canned or fresh
Green onions
2, sliced for garnish
Rice
2 cups, cooked (for serving)
Sweet and sour sauce
1 cup

Instructions

  1. In a medium bowl, season the chicken pieces with salt and pepper, ensuring they are well-coated.
  2. Evenly coat the chicken pieces with cornstarch, shaking off any excess to achieve a light crust.
  3. In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
  4. Add the chicken pieces to the skillet in a single layer and cook for about 5-7 minutes, turning occasionally, until golden brown and crispy. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced bell peppers and stir-fry for 3-4 minutes, until they are slightly softened.
  6. Add the pineapple chunks and sweet and sour sauce to the skillet, stirring to combine and heat through.
  7. Return the crispy chicken to the skillet and gently toss to coat everything in the vibrant sauce. Cook for an additional 2-3 minutes, until the sauce is heated through and everything is well combined.
  8. Serve the sweet and sour chicken over a bed of cooked rice.
  9. Garnish with sliced green onions for a fresh finish.
  10. Enjoy your delicious homemade sweet and sour chicken!
