- 1/4 cup
- Rice vinegar
- 1/4 cup
- Ketchup
- 1/3 cup
- Soy sauce
- 1/3 cup
- Sesame seeds
- 2 tablespoons, for garnish
- Green onions
- 2, sliced, for garnish
- Salt

- Pepper
- to taste
- Cooked rice
- 4 cups, to serve
Instructions
- In a small bowl, whisk together the soy sauce, ketchup, rice vinegar, brown sugar, and dissolved cornstarch until smooth. Set this flavorful sweet and sour sauce aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Ensure the oil is hot before adding the chicken to achieve a nice sear.
- Add the chicken pieces to the skillet and cook, stirring frequently, until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, pineapple chunks, onion, garlic, and ginger. Stir fry for 3-4 minutes until the vegetables are crisp-tender and fragrant.
- Return the cooked chicken to the skillet and pour the prepared sweet and sour sauce over the chicken and vegetables. Stir well to coat everything in the sauce.
