Instructions
- In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, ketchup, cornstarch, and water until smooth to create the sweet and sour sauce.
- Heat vegetable oil in a skillet over medium heat. Add the sliced tempeh and cook for about 5 minutes on each side or until golden brown and crispy.
- Pour the prepared sweet and sour sauce over the tempeh in the skillet. Stir well to evenly coat the tempeh. Cook for an additional 2-3 minutes, allowing the sauce to thicken and glaze the tempeh.
- Warm the tortilla wraps in a separate skillet or microwave for a few seconds until pliable.
- To assemble the wraps, place a lettuce leaf on each tortilla wrap, followed by a generous portion of the sweet and sour tempeh. Top with sliced bell peppers, red onion, and julienned carrot.
- Fold the sides of the tortilla wraps over the filling, then roll tightly to form a wrap.
- Serve the sweet and sour tempeh wraps immediately, and enjoy the delicious burst of flavors!
Tips
- For added texture, consider adding sliced cucumbers or avocado.
- If you like it spicy, include sliced jalapeños or a dash of Sriracha in the sweet and sour sauce.
- These wraps can also be made ahead of time; just keep the fillings separate until ready to serve.
