Instructions
- Preheat a grill or grill pan over medium heat.
- In a large mixing bowl, combine the diced grilled chicken, pineapple chunks, red bell pepper, red onion, jalapeno, cilantro, lime juice, salt, pepper, and sweet and spicy sauce. Stir well to ensure all ingredients are evenly coated in the sauce.
- Warm the flour tortillas on the grill for about 1 minute on each side until they are soft and pliable.
- Evenly divide the chicken and pineapple mixture between the warmed tortillas.
- Fold in the sides of each tortilla over the filling, then roll them up tightly from the bottom to form burritos.
- Serve the sweet and spicy pineapple burritos warm, garnished with extra cilantro if desired.
Tips
- For an extra layer of flavor, grill the pineapple chunks for a few minutes until caramelized before adding them to the filling.
- You can customize the heat level by adding more or less jalapeno or incorporating a spicier sauce.
- These burritos can also be made vegetarian by substituting the grilled chicken with black beans or grilled tofu.
